For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup sugar

For the cheesecake filling:

16 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

2 cups fresh strawberries, pureed

For the crispy topping:

1 cup crushed freeze-dried strawberries

1 cup crushed Cornflakes

¼ cup white chocolate chips, melted

1 tbsp sugar (optional)

Instructions
 

Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix well until the mixture resembles wet sand. Press the crust firmly into the bottom of a 9-inch springform pan. Refrigerate while you prepare the filling.

    Make the cheesecake filling: In a large bowl, beat the softened cream cheese with an electric mixer until creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.

      Incorporate the strawberries: Add the strawberry puree to the cream cheese mixture and gently fold it in until well combined and smooth.

        Assemble the cheesecake: Pour the strawberry cheesecake filling over the chilled crust in the springform pan. Smooth the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight for the best set.

          Prepare the crispy topping: In a bowl, combine the crushed freeze-dried strawberries and crushed Cornflakes. Add melted white chocolate and mix until evenly coated. If desired, sprinkle in sugar to enhance sweetness.
