For the Crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened

1 cup creamy peanut butter

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

For the Topping:

½ cup chocolate sauce, for drizzling

Chopped peanuts, for garnish

Prepare the Crust: In a medium bowl, combine graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9x9-inch square baking dish to create an even layer. Refrigerate while you prepare the filling.

    Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add in the peanut butter and continue to mix until fully incorporated. Gradually add the powdered sugar and vanilla extract, mixing on low until blended.

      Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold this whipped cream into the peanut butter mixture until there are no white streaks remaining. Be careful not to deflate the whipped cream.

        Assemble the Bars: Pour the peanut butter cheesecake filling over the prepared crust and spread it out evenly using a spatula. Smooth the top. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

          Serve: Once set, remove from the refrigerator. Drizzle chocolate sauce over the top and sprinkle with chopped peanuts. Cut into bars and serve chilled.
