Ingredients

1 ½ cups Fruity Pebbles cereal

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup whipped topping (like Cool Whip)

½ cup sour cream

Additional Fruity Pebbles for topping

Optional: colorful sprinkles for garnish

Instructions

Make the Crust: In a medium bowl, combine the crushed Fruity Pebbles and melted butter. Mix until the cereal is thoroughly coated. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Place in the refrigerator while you prepare the filling.

Prepare the Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and continue to mix until well combined.

Add Flavors: Mix in the vanilla extract and sour cream until fully incorporated.

Incorporate Whipped Topping: Gently fold in the whipped topping with a spatula, taking care not to deflate the mixture. This will add lightness to your cheesecake filling.

Add Fruity Pebbles: Carefully fold in 1 cup of Fruity Pebbles into the cheesecake mixture for added texture and flavor.

Assemble: Pour the cheesecake filling over the prepared crust and spread it out evenly.

Chill: Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or ideally overnight, until set.

Serve: Once chilled and set, carefully remove the sides of the springform pan. Top with additional Fruity Pebbles and colorful sprinkles if desired before slicing and serving.

Prep Time: 20 minutes | Total Time: 4 hours 20 minutes (includes chilling) | Servings: 8-10
