Ingredients
  

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) corn, drained

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

2 cups frozen tater tots

2 cups shredded cheddar cheese

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper, to taste

Fresh cilantro or green onions, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Meat: In a large skillet over medium heat, brown the ground beef with the chopped onion and minced garlic, stirring frequently until the meat is fully cooked and the onions are translucent. Drain any excess grease.

      Combine Ingredients: Stir in the corn, black beans, diced tomatoes (with their juices), chili powder, cumin, smoked paprika, salt, and pepper. Mix well and let it simmer for about 5 minutes to meld the flavors.

        Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the meat mixture evenly. Layer half of the tater tots over the top, followed by half of the shredded cheddar cheese. Repeat the layers with the remaining meat mixture, tater tots, and cheese.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the tater tots are golden brown and the cheese is bubbly.

            Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro or sliced green onions, if desired. Serve warm and enjoy your cowboy casserole delight!
