12 lasagna noodles

2 tablespoons olive oil

1 onion, finely chopped

3 cloves garlic, minced

10 oz (280g) mushrooms, sliced (e.g., cremini or button)

5 oz (140g) fresh spinach, roughly chopped

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 cups ricotta cheese

1 egg

1 cup grated Parmesan cheese

3 cups marinara sauce

2 cups shredded mozzarella cheese

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the Lasagna Noodles: In a large pot of salted boiling water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until softened (about 3-4 minutes). Add the mushrooms, and cook until they release their juices and begin to brown (about 5-6 minutes). Stir in the spinach, oregano, basil, salt, and pepper. Cook until the spinach wilts, then remove from heat and allow to cool slightly.

        Prepare the Cheese Mixture: In a mixing bowl, combine the ricotta cheese, egg, half of the Parmesan cheese, and a pinch of salt and pepper. Mix until well combined.

          Assemble the Lasagna: In a 9x13 inch baking dish, spread a layer of marinara sauce (about 1 cup) on the bottom. Place 4 lasagna noodles on top. Spread half of the ricotta mixture over the noodles, followed by half of the sautéed mushroom and spinach mixture. Sprinkle with 1/3 of the mozzarella cheese. Repeat the layers: sauce, noodles, ricotta mixture, mushroom/spinach, and mozzarella. Top with the final layer of noodles, remaining marinara sauce, the rest of the mozzarella cheese, and the remaining Parmesan cheese.

            Cover and Bake: Cover the dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray). Bake in the preheated oven for about 25 minutes.

              Uncover and Continue Baking: Remove the foil and bake for another 15 minutes, or until the cheese is bubbly and golden brown.

                Cool and Serve: Allow the lasagna to cool for about 10-15 minutes before slicing. This helps it hold its shape when serving.
