Ingredients

1 lb (450g) fresh button or cremini mushrooms

4 tbsp unsalted butter

2 tbsp olive oil

4 cloves garlic, minced

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

1 tsp fresh parsley, chopped (plus more for garnish)

½ tsp salt

¼ tsp black pepper

Juice of ½ lemon

Grated Parmesan cheese (optional)

Instructions

Clean the Mushrooms: Gently wipe the mushrooms with a damp paper towel to remove any dirt. Avoid rinsing them in water to prevent them from becoming soggy.

Prepare the Garlic Butter: In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once the butter has melted, add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

Add the Mushrooms: Increase the heat to medium-high, then add the mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and tender.

Season: Sprinkle in the thyme, parsley, salt, and black pepper. Stir well to combine and let it cook for another minute.

Finish with Lemon and Remaining Butter: Remove the skillet from heat and squeeze the lemon juice over the mushrooms. Add the remaining 2 tablespoons of butter, stirring to melt and combine.

Serve: Transfer the garlic butter mushrooms to a serving dish and top with extra parsley and grated Parmesan cheese if desired. Enjoy them warm as a side dish or topping for steaks!
