Mouthwatering Spicy Cajun Shrimp

Ingredients
  

1 lb large shrimp, deveined and peeled

1 tbsp olive oil

2 tbsp Cajun seasoning

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for spice preference)

4 cloves garlic, minced

1/2 cup onion, finely chopped

1 bell pepper, diced (any color)

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

Juice of 1 lemon

Salt and pepper to taste

Cooked rice or pasta, for serving

Instructions
 

In a bowl, toss the shrimp with olive oil, Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper. Ensure the shrimp are evenly coated and set aside to marinate for about 15 minutes.

    Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      In the same skillet, add a splash more olive oil if needed, then add the chopped onion and bell pepper. Sauté for about 3-4 minutes until the vegetables soften.

        Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

          Add the cherry tomatoes and stir until they start to soften, around 2-3 minutes.

            Return the cooked shrimp to the skillet and mix everything together, allowing the flavors to meld for a minute.

              Squeeze fresh lemon juice over the top and sprinkle with chopped parsley for garnish.

                Serve the spicy Cajun shrimp over cooked rice or pasta, and enjoy!
