12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

3 tablespoons olive oil, divided

4 cloves garlic, minced

1 medium onion, diced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Boil Pasta: In a large pot of salted boiling water, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Season Shrimp: In a bowl, toss the shrimp with Cajun seasoning until evenly coated.

      Cook Shrimp: In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add the seasoned shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic and diced onion for about 2 minutes until softened. Add the sliced red and green bell peppers and cook for an additional 3-4 minutes until they are tender.

          Add Tomatoes and Cream: Stir in the halved cherry tomatoes and cook for 1 minute. Pour in the heavy cream and bring the mixture to a gentle simmer. Add the grated Parmesan cheese and stir until melted and creamy. Season with salt and pepper to taste.

            Combine Pasta and Shrimp: Add the cooked fettuccine and shrimp to the skillet. Toss everything together, adding a little reserved pasta water if necessary, to reach the desired consistency. Adjust seasoning if needed.

              Serve: Plate the pasta and garnish with fresh chopped parsley. Serve with lemon wedges on the side for a zesty finish.
