1 cup whole wheat flour

1 cup grated carrots

1/2 cup unsweetened shredded coconut

1/2 cup crushed pineapple, drained

1 teaspoon ground cinnamon

3/4 cup sugar (or a sugar substitute)

2 large eggs

1/2 cup vegetable oil or melted coconut oil

1 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with non-stick spray.

    Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, and salt. Stir in the sugar, grated carrots, shredded coconut, crushed pineapple, nuts, and raisins until evenly mixed.
