8 oz spaghetti

2 boneless, skinless chicken breasts

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

1 cup cherry tomatoes, halved

1 cup corn (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 cup Monterey Jack cheese, shredded

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Optional: Sliced jalapeños for heat

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the spaghetti is cooking, season the chicken breasts with garlic powder, smoked paprika, salt, and pepper.

      Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the seasoned chicken breasts and cook for about 6-7 minutes per side, or until cooked through and golden brown. Remove from the skillet and let rest for 5 minutes before slicing.

        Sauté the Vegetables: In the same skillet, add the cherry tomatoes and corn. Sauté for about 3-4 minutes until the tomatoes start to soften.

          Combine Ingredients: Add the drained spaghetti to the skillet with the tomatoes and corn. Toss gently to combine. Stir in the black beans and sliced chicken.

            Cheese It Up: Sprinkle the shredded Monterey Jack cheese over the top. Cover the skillet, allowing the cheese to melt for about 2-3 minutes.

              Serve: Once the cheese is melted, remove the skillet from heat. Drizzle with lime juice and top with diced avocado and fresh cilantro. If you desire heat, add jalapeño slices as a garnish.
