1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

2 tablespoons vegetable oil

4 cloves garlic, minced

1-inch ginger, grated

1/2 cup soy sauce

1/4 cup brown sugar

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional, for heat)

4 green onions, sliced (plus extra for garnish)

1 cup broccoli florets (blanched)

1 bell pepper (red or green), sliced

Cooked rice or quinoa, for serving

Instructions
 

Prepare the Chicken: In a bowl, toss the chicken pieces in cornstarch until evenly coated. This will create a crispy texture when cooked.

    Cook Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken pieces and cook for about 5-7 minutes, turning occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add minced garlic and grated ginger. Sauté for about 1 minute until fragrant, being careful not to burn.

        Make the Sauce: In a bowl, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, and red pepper flakes (if using). Pour this mixture into the skillet, bringing it to a simmer.

          Combine: Add the cooked chicken back into the skillet along with blanched broccoli and sliced bell pepper. Stir well, allowing everything to coat in the sauce and heat through for about 3-4 minutes.

            Finish and Garnish: Sprinkle sliced green onions on top before serving.
