Ingredients
  

1 cup all-purpose flour

1/4 cup unsalted butter, softened

1/4 cup granulated sugar

1/4 teaspoon salt

1/4 cup cold water

1 cup pecans, roughly chopped

3/4 cup light corn syrup

3/4 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

Pinch of salt

Instructions
 

Prepare the Dough: In a mixing bowl, combine the all-purpose flour, softened butter, granulated sugar, and salt. Mix until crumbly. Gradually add cold water, 1 tablespoon at a time, mixing until just combined. Do not overwork the dough.

    Chill the Dough: Form the dough into a disk, wrap it in plastic wrap, and chill in the refrigerator for about 30 minutes.

      Preheat Oven: Preheat your oven to 350°F (175°C).

        Roll Out and Cut: On a floured surface, roll out the chilled dough to about 1/8-inch thick. Use a round cutter to cut out circles and fit them into a mini muffin tin, pressing down gently.

          Prepare the Filling: In a mixing bowl, whisk together the light corn syrup, brown sugar, eggs, vanilla extract, ground cinnamon, and a pinch of salt until smooth. Stir in the chopped pecans.

            Fill the Tarts: Spoon the pecan mixture evenly into the prepared tart shells, filling each one about 3/4 full.

              Bake the Tarts: Place the mini muffin tin in the preheated oven and bake for about 20–25 minutes, or until the filling is set and the edges of the tarts are golden brown.

                Cool and Serve: Remove the tarts from the oven and let them cool in the pan for about 10 minutes. Carefully transfer them to a wire rack to cool completely.

                  Enjoy: Serve the mini pecan tarts at room temperature or slightly warmed. They make a delightful dessert or a sweet treat for any occasion!
