Ingredients

For the Crust:

1 cup crushed graham crackers

1/4 cup melted coconut oil

2 tablespoons granulated sugar

For the Filling:

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup whipped cream (store-bought or homemade)

For the Topping:

1 cup mixed fresh fruit (strawberries, blueberries, kiwi, mango)

Optional: Mint leaves for garnish

Instructions

Prepare the Crust:

    - In a medium bowl, mix together the crushed graham crackers, melted coconut oil, and granulated sugar until well combined.

      - Press the mixture evenly into the bottom and up the sides of small tart pans or mini muffin tins to form the crust. Use the back of a spoon to ensure the crust is compact.

        - Place the crusts in the refrigerator for about 30 minutes to set.

          Make the Filling:

            - In a large mixing bowl, beat the softened cream cheese until smooth.

              - Gradually add the powdered sugar and vanilla extract, mixing until combined and creamy.

                - Gently fold in the whipped cream until well incorporated.

                  Assemble the Tarts:

                    - Remove the crusts from the refrigerator. Spoon or pipe the cream cheese filling into each crust, filling them generously but not overflowing.

                      - Arrange the assorted fresh fruit on top of the filling, creating a colorful and appealing presentation.

                        Chill and Serve:

                          - Return the tarts to the refrigerator for at least 1 hour to allow the flavors to meld and the tarts to firm up.

                            - Before serving, garnish with fresh mint leaves if desired.

                              Enjoy!

                                - Serve chilled and enjoy your delightful no-bake mini fruit tarts!
