Ingredients

6 large eggs

1/4 cup milk (or dairy-free alternative)

1/2 cup shredded cheddar cheese (or your favorite cheese)

1/4 cup cooked and crumbled bacon or sausage (optional)

1/4 cup finely chopped bell peppers (red or green)

1/4 cup spinach, chopped

Salt and pepper to taste

Cooking spray or olive oil for greasing

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or olive oil.

Mix Ingredients: In a large mixing bowl, whisk together the eggs and milk until well combined. Stir in the shredded cheese, cooked meat (if using), bell peppers, spinach, salt, and pepper.

Fill Muffin Tin: Pour the egg mixture into the greased muffin tin, filling each cup about 3/4 full.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg bites are puffed up and a toothpick inserted into the center comes out clean.

Cool and Serve: Let the mini egg bites cool for a few minutes in the tin before gently removing them. They can be stored in the fridge for up to a week or frozen for longer storage.

Enjoy: Reheat them in the microwave for a quick and nutritious on-the-go breakfast or snack!
