2 cups frozen tater tots

8 large eggs

1/2 cup milk

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 cup diced bell peppers (any color)

1/2 cup diced onions

1/2 cup cooked and crumbled sausage or bacon (optional)

Salt and pepper to taste

Fresh herbs for garnish (chives or parsley)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Tater Tot Crust: In a food processor, pulse the tater tots until they form a rough mash. You can also place them in a zip-top bag and crush them with a rolling pin if you don’t have a food processor.

      Shape the Crust: Spray a muffin tin with cooking spray. Divide the crushed tater tots evenly into 12 muffin cups, pressing them firmly against the bottom and up the sides to form a crust. Bake in the oven for 15 minutes or until the crusts are golden and crispy.

        Make the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the cheese, bell peppers, onions, and sausage or bacon if using.

          Fill the Tater Tot Crusts: Once the tater tot crusts are done baking, carefully pour the egg mixture into each crust, filling them about 3/4 full.

            Bake: Return the muffin tin to the oven and bake for an additional 15-20 minutes, or until the egg is set and slightly golden on top. A toothpick inserted in the center should come out clean.

              Cool and Serve: Allow the mini omelets to cool for a few minutes, then use a butter knife to gently loosen the edges and remove them from the muffin tin. Garnish with fresh herbs if desired and serve warm.
