Million Dollar Baked Tortellini Casserole

Ingredients
  

12 oz cheese tortellini (fresh or frozen)

1 lb Italian sausage (bulk or sliced)

1 small onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 can (15 oz) pizza sauce

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 cups shredded mozzarella cheese

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

Fresh basil for garnish (optional)

Instructions
 

Preheat oven to 375°F (190°C).

    Cook the tortellini: In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente, about 3-5 minutes. Drain and set aside.

      Prepare the meat sauce: In a large skillet over medium heat, add the Italian sausage. Cook until browned and cooked through, breaking it up with a spoon as it cooks. About 5-7 minutes. Remove excess fat if necessary.

        Add onions and garlic: Stir in the diced onion and minced garlic to the skillet. Cook for another 2-3 minutes until the onion is translucent.

          Combine sauces: Pour in the crushed tomatoes and the pizza sauce. Stir in the Italian seasoning, red pepper flakes (if using), salt, and pepper. Let the sauce simmer for about 10 minutes, stirring occasionally.

            Combine with tortellini: In a large mixing bowl, combine the cooked tortellini and the meat sauce. Mix until the tortellini is well coated.

              Layer the casserole: In a greased 9x13 inch baking dish, spread half of the tortellini and meat mixture. Dollop half of the ricotta cheese over the top, followed by half of the mozzarella cheese. Repeat this process with the remaining tortellini, ricotta, and top it off with the grated Parmesan cheese.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

                  Garnish and serve: Once out of the oven, let it cool for a few minutes. Garnish with fresh basil if desired before serving.
