Traditionally, it's made by grilling corn on the cob and slathering it with a creamy mixture, topped with cheese, spices, and fresh herbs. This dish has gained immense popularity not just in Mexico but also in various culinary circles around the globe, often appearing at food festivals, street fairs, and backyard barbecues. The allure of elote lies in its rich, savory taste and the delightful combination of textures—the crunch of the corn, the creaminess of the sauce, and the tang of lime.
