Mexican Street Corn Dip

A delightful twist on a classic dish.

Ingredients
  

4 cups corn kernels (fresh, frozen, or canned)

1/2 cup mayonnaise

1/2 cup sour cream

1 cup crumbled cotija cheese

1/4 cup fresh cilantro, chopped

1 tablespoon lime juice

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper to taste

Tortilla chips (for serving)

Instructions
 

If using fresh corn, grill the corn on medium heat until charred, about 10 minutes. If using frozen or canned corn, sauté in a skillet over medium heat until heated through and slightly caramelized.

    In a large mixing bowl, combine the corn, mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, garlic powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.

      Adjust seasoning according to taste, adding more lime juice or salt if desired.

        Transfer the dip to a serving bowl and garnish with additional cotija cheese, cilantro, and a sprinkle of chili powder, if desired.

          Serve with tortilla chips for dipping.
