Ingredients

2 cups shredded cheddar cheese

1 cup shredded pepper jack cheese

1 cup evaporated milk

1/2 cup diced tomatoes with green chilies (such as Rotel)

1/4 cup cream cheese, softened

1/4 cup chopped green onions

1 jalapeño, seeds removed and finely diced (optional for extra heat)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cumin

Salt and pepper to taste

Tortilla chips or fresh vegetables for serving

Instructions

Prepare the Ingredients: Gather all the ingredients. If using fresh tomatoes or jalapeños, chop them finely and set aside.

Combine the Dairy: In a medium saucepan over medium heat, combine the cheddar cheese, pepper jack cheese, evaporated milk, and cream cheese. Stir continuously until the cheeses begin to melt and the mixture is smooth.

Add Flavorings: Once the cheeses have melted, lower the heat and stir in the diced tomatoes with green chilies, chopped green onions, jalapeño (if using), garlic powder, onion powder, cumin, salt, and pepper.

Simmer: Continue to stir the mixture gently until all the ingredients are well combined and heated through, about 5-7 minutes. Take care to avoid letting it boil; you want a smooth consistency.

Adjust Consistency: If the cheese dip is too thick, add a little more evaporated milk until you reach your desired consistency. If it's too thin, let it cook a few minutes longer to thicken.

Serve: Pour the cheese dip into a serving dish and garnish with additional chopped green onions or diced tomatoes if desired. Serve warm with tortilla chips or fresh veggies.
