2 cups elbow macaroni

1 cup cherry tomatoes, halved

1 cup corn kernels (canned or frozen)

1 cup black beans, rinsed and drained

1/2 cup bell pepper (red or yellow), diced

1 jalapeño, seeded and minced (optional for heat)

1/2 cup fresh cilantro, chopped

1/2 teaspoon cumin

1/2 teaspoon chili powder

1 cup mayonnaise

1/4 cup lime juice

Salt and pepper to taste

1 avocado, diced (for garnish)

Begin by cooking the elbow macaroni according to the package instructions. Once cooked, drain and rinse under cold water to cool it down. Set aside in a large mixing bowl.
