Mediterranean Salad with Cucumber, Tomato and Onion

A delightful twist on a classic dish.

Ingredients
  

2 medium cucumbers, diced

3 medium ripe tomatoes, chopped

1 small red onion, thinly sliced

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large mixing bowl, combine the diced cucumbers, chopped tomatoes, and sliced red onion.

    Add the Kalamata olives and crumbled feta cheese to the bowl.

      In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper until well combined.

        Drizzle the dressing over the salad and gently toss all ingredients together until evenly coated.

          Allow the salad to sit for about 10 minutes to let the flavors meld.

            Garnish with freshly chopped parsley before serving.
