Ingredients

2 medium zucchinis, sliced into thin rounds

2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup cherry tomatoes, halved

1 red bell pepper, chopped

1 onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

½ teaspoon salt (or to taste)

¼ teaspoon black pepper (or to taste)

1 cup feta cheese, crumbled

½ cup black olives, sliced (optional)

3 tablespoons olive oil

Fresh basil for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Chicken: In a large mixing bowl, combine the chicken pieces with olive oil, garlic, oregano, thyme, paprika, salt, and pepper. Mix until the chicken is nicely coated.

Layer the Vegetables: In a 9x13 inch baking dish, layer the zucchini slices at the bottom followed by the chopped onion, red bell pepper, and cherry tomatoes. Sprinkle the black olives over the vegetables if you're using them.

Add the Chicken: Spread the marinated chicken evenly over the vegetables in the baking dish.

Top with Feta: Crumble the feta cheese over the entire dish, ensuring it covers the chicken and veggies.

Bake: Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.

Garnish and Serve: Remove from the oven, let it cool for a few minutes, then garnish with fresh basil before serving.

Enjoy your flavorful Mediterranean Chicken Zucchini Bake – a meal that’s both healthy and satisfying!
