Mediterranean Baked Feta Eggs

Ingredients
  

200g feta cheese, crumbled

4 large eggs

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1 red bell pepper, diced

2 cloves garlic, minced

1/4 cup Kalamata olives, pitted and chopped

1 teaspoon dried oregano

1 teaspoon paprika

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley or basil, for garnish

Crusty bread, for serving

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large oven-safe skillet, heat the olive oil over medium heat. Add the sliced red onion and cook until softened, about 5 minutes.

      Stir in the minced garlic, bell pepper, and halved cherry tomatoes. Sauté for an additional 3-4 minutes until the tomatoes start to blister.

        Add the chopped Kalamata olives, dried oregano, paprika, red pepper flakes, salt, and pepper. Mix well and cook for another 2 minutes.

          Create four small wells in the vegetable mixture and gently crack an egg into each well.

            Sprinkle the crumbled feta cheese evenly over the top of the eggs and veggies.

              Transfer the skillet to the oven and bake for approximately 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.

                Remove from the oven and let cool slightly. Garnish with fresh parsley or basil before serving.

                  Serve the Mediterranean baked feta eggs hot with crusty bread for dipping.
