Ingredients
  

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1 cup mini marshmallows (plus more for topping)

Optional: 1/4 cup crushed peppermint candies for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Cream the Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until fluffy and light in color (about 3-5 minutes).

      Add Eggs and Vanilla: Beat in the eggs, one at a time, until combined. Then add the vanilla extract and mix well.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.

          Mix Dry and Wet Ingredients: Gradually add the dry ingredients into the wet mixture, mixing until just combined. Be careful not to overmix.

            Add Chocolate Chips and Marshmallows: Fold in the semi-sweet chocolate chips and 1 cup of mini marshmallows. The dough should be thick and slightly sticky.

              Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

                Add the Surprise: Press a few additional mini marshmallows into the top of each cookie dough ball for that “surprise” effect.

                  Bake the Cookies: Place the baking sheets in the preheated oven and bake for 10-12 minutes, or until the edges are set but the centers are still soft. They will puff up and then flatten a little as they cool.

                    Cool and Serve: Remove from the oven and let the cookies cool on the baking sheets for 5 minutes. Transfer them to a wire rack to cool completely. If desired, sprinkle crushed peppermint candies on top while they’re still warm for an extra festive touch.
