Ingredients

1 pound chicken breast, diced

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup sun-dried tomatoes, chopped

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup spinach, chopped

1 package (9 oz) cheese tortellini (fresh or frozen)

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil, for garnish

Instructions

Cook the Chicken: In a large skillet over medium heat, heat the olive oil. Season the diced chicken breast with salt and pepper, then add it to the skillet. Cook for about 5-7 minutes or until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.

Sauté the Garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.

Prepare the Sauce: Pour the heavy cream and chicken broth into the skillet, stirring to combine. Add the chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes. Allow the sauce to simmer for about 5 minutes, stirring occasionally.

Cook the Tortellini: While the sauce simmers, cook the tortellini according to package instructions. Drain and set aside.

Combine Ingredients: Add the cooked chicken, chopped spinach, and cooked tortellini to the skillet with the sauce. Stir well to combine and allow everything to heat through for another 3-4 minutes.

Add Cheese: Stir in the grated Parmesan cheese until melted and the sauce is creamy. Adjust seasoning with salt and pepper to taste.

Serve: Plate the Marry Me Chicken Tortellini and garnish with fresh basil. Serve hot and enjoy!
