2 chicken breasts, diced

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup fresh spinach

1/2 cup grated Parmesan cheese

1 package (9 oz) cheese tortellini

Fresh basil, for garnish

Instructions
 

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to the package instructions. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Season the diced chicken breasts with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook until golden brown and cooked through, about 7-8 minutes. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the cherry tomatoes and cook for another 3-4 minutes until they start to soften.

        Make it Creamy: Pour in the heavy cream and mix well. Bring the mixture to a gentle simmer, then add the fresh spinach and Parmesan cheese. Cook until the spinach wilts and the cheese is melted, about 2-3 minutes.
