Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

1 cup grated Parmesan cheese

8 ounces penne pasta

Fresh basil, for garnish

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet over medium heat, heat the olive oil. Add the chicken and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and let rest, then slice thinly.

Sauté Garlic: In the same skillet, add the minced garlic and red pepper flakes. Sauté for about 1 minute, or until fragrant.

Make the Sauce: Add the chopped sun-dried tomatoes to the skillet. Pour in the heavy cream and chicken broth. Stir in the Italian seasoning and bring the mixture to a gentle simmer. Let it cook for about 5-7 minutes or until the sauce thickens slightly.

Cook Pasta: Meanwhile, in a separate pot, bring salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

Combine: Once the sauce is thickened, stir in the grated Parmesan cheese until it melts and combines into the sauce. Add the sliced chicken to the sauce, mixing gently. Finally, add the cooked pasta to the skillet and toss until everything is well coated.

Serve: Plate the pasta and chicken mixture. Garnish with fresh basil and additional Parmesan cheese if desired.
