1 cup mashed sweet potatoes (about 1 medium sweet potato)

1 cup all-purpose flour

1/2 cup chopped pecans

1/4 cup brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

2 large eggs

1/2 cup milk (dairy or non-dairy)

1/4 cup maple syrup

1/4 cup melted butter or coconut oil

Optional: Whipped cream and extra pecans for serving

Preheat the Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions. If you have a non-stick waffle iron, there's no need for additional oil, but a light spray can ensure easy release.

    Prepare Sweet Potatoes: If not already done, peel and boil a sweet potato in water until tender (about 15 minutes). Drain and mash until smooth. Measure 1 cup of mashed sweet potatoes and set aside to cool slightly.

      Mix Dry Ingredients: In a large bowl, combine the flour, chopped pecans, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix thoroughly to ensure that the baking powder and baking soda are evenly distributed.

        Combine Wet Ingredients: In another bowl, whisk together the eggs, milk, maple syrup, and melted butter until fully combined. Add the mashed sweet potato to the wet mixture and mix until smooth.

          Combine Mixtures: Pour the wet mixture into the dry mixture and gently fold until just combined. Be careful not to overmix; a few lumps are perfectly fine.

            Cook Waffles: Lightly grease the preheated waffle iron and pour the recommended amount of batter onto the center (depending on your waffle iron size). Close the lid and cook according to the machine's directions (usually about 4-5 minutes) or until golden brown and crisp.
