Ingredients
  

1 lb baby carrots (or regular carrots, peeled and cut into sticks)

2 tablespoons olive oil

3 tablespoons pure maple syrup

1 teaspoon balsamic vinegar

1 teaspoon garlic powder

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and black pepper to taste

Optional: chopped fresh parsley for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the olive oil, maple syrup, balsamic vinegar, garlic powder, thyme, salt, and pepper. Whisk until well blended.

      Add the carrots to the mixing bowl and toss until they are evenly coated with the maple mixture.

        Spread the carrots in a single layer on a baking sheet lined with parchment paper.

          Roast the carrots in the preheated oven for 25–30 minutes, tossing halfway through, until they are tender and caramelized.

            Once done, remove them from the oven and let them cool for a few minutes.

              Transfer the glazed carrots to a serving dish and finish with a sprinkle of fresh parsley if desired.
