Maple Bourbon Glazed Pork Chops

Ingredients
  

4 bone-in pork chops (about 1 inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

1/2 cup pure maple syrup

1/4 cup bourbon

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 tablespoon apple cider vinegar

1 teaspoon ground cinnamon (optional)

Fresh rosemary or thyme for garnish (optional)

Instructions
 

Prepare the Pork Chops:

    Season both sides of the pork chops with salt and pepper. Let them sit at room temperature for about 15 minutes.

      Make the Glaze:

        In a medium saucepan over medium heat, combine the maple syrup, bourbon, Dijon mustard, minced garlic, apple cider vinegar, and ground cinnamon. Stir well and bring to a gentle simmer. Reduce the heat to low and let it simmer for about 10 minutes, or until it thickens slightly. Stir occasionally.

          Sear the Pork Chops:

            In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side, or until they develop a golden brown crust.

              Glaze the Pork Chops:

                Once the pork chops are seared, reduce the heat to medium-low. Pour half of the maple bourbon glaze over the chops, making sure they’re well-coated. Continue cooking for an additional 4-6 minutes, turning occasionally and brushing with the glaze until the pork reaches an internal temperature of 145°F (63°C).

                  Rest and Serve:

                    Remove the pork chops from the skillet and let them rest for about 5 minutes. Drizzle the remaining glaze over the chops before serving. Garnish with fresh rosemary or thyme if desired.
