Ingredients
  

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

½ teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter

½ cup cooked bacon, chopped (plus extra for garnish)

¼ cup maple syrup (plus extra for serving)

Optional: powdered sugar for dusting

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin.

    Mix Dry Ingredients: In a mixing bowl, sift together the flour, sugar, baking powder, and salt.

      Prepare Wet Ingredients: In a separate bowl, whisk together the buttermilk, egg, and melted butter until well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

          Add Bacon: Gently fold in the chopped bacon and ¼ cup of maple syrup into the batter.

            Fill the Muffin Tin: Using a spoon or small cookie scoop, fill each mini muffin cup about ¾ of the way full with batter.

              Bake: Bake in the preheated oven for about 12-15 minutes or until the pancake bites are golden brown and a toothpick inserted into the center comes out clean.

                Let Cool: Remove from the oven and allow them to cool in the tin for a couple of minutes before transferring them to a wire rack.
