2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

4 strips bacon, cooked until crispy and crumbled

1/4 cup pure maple syrup

3/4 cup buttermilk

1 tablespoon chopped fresh chives (optional, for garnish)

Extra maple syrup for drizzling

Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk together until well combined.

      Add the cold cubed butter into the flour mixture. Using a pastry cutter or your hands, blend the butter until the mixture resembles coarse crumbs.

        Stir in the shredded cheddar cheese and crumbled bacon until evenly distributed.

          In a separate bowl, whisk together the maple syrup and buttermilk until smooth.

            Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

              Turn the dough out onto a lightly floured surface. Gently knead it a few times until it comes together, then pat it into a 1-inch thick rectangle.

                Use a biscuit cutter or a glass to cut out biscuits from the dough. Place them on the prepared baking sheet, ensuring they are close but not touching.

                  Gather any scraps, re-knead gently, and continue cutting out additional biscuits until all the dough is used.

                    Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.
