Ingredients

2 cups plain Greek yogurt

1 ripe mango, diced

2 tablespoons honey (or maple syrup for a vegan option)

1 tablespoon Tajín seasoning (or more to taste)

1 teaspoon vanilla extract

1/4 cup chopped nuts (such as almonds or pistachios)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, honey, and vanilla extract. Mix well until the ingredients are thoroughly combined and creamy.

Spread the Yogurt: Line a baking sheet with parchment paper. Pour the yogurt mixture onto the parchment and spread it out evenly with a spatula, creating a rectangle about 1/4 inch thick.

Add the Mango: Evenly distribute the diced mango on top of the yogurt layer. Press the mango pieces lightly into the yogurt to ensure they adhere.

Season with Tajín: Sprinkle Tajín seasoning evenly over the top of the yogurt and mango. Adjust the amount to your taste preference for that spicy kick.

Top with Nuts: Sprinkle the chopped nuts over the mango and yogurt mixture for added crunch and flavor.

Freeze: Place the baking sheet in the freezer and let the yogurt bark freeze for at least 4 hours, or until fully set.

Break & Serve: Once solid, remove from the freezer and let it sit for a couple of minutes to soften slightly for easier handling. Break the yogurt bark into pieces and serve immediately. Garnish with fresh mint leaves if desired.

Storage: Store any leftovers in an airtight container in the freezer for up to a week.
