Ingredients

For the Crepes:

1 cup all-purpose flour

2 large eggs

1 ½ cups milk

2 tablespoons granulated sugar

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

A pinch of salt

For the Mango Filling:

2 ripe mangoes, pureed (about 1 ½ cups)

1 cup heavy cream, whipped

3 tablespoons powdered sugar

1 teaspoon vanilla extract

For the Topping:

Fresh mango slices, for garnish

Mint leaves, for garnish

Optional: toasted coconut flakes

Instructions

Prepare the Crepe Batter:

    - In a mixing bowl, whisk together the flour, sugar, and a pinch of salt. In another bowl, beat the eggs and mix in the milk, melted butter, and vanilla extract. Gradually combine the wet ingredients with the dry ingredients, mixing until smooth. Let the batter rest for 30 minutes.

      Make the Crepes:

        - Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour about ¼ cup of the batter into the skillet, swirling it around to spread evenly. Cook for 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip and cook for another minute. Transfer to a plate and repeat with the remaining batter, stacking the crepes as you go. Let them cool completely.

          Prepare the Mango Filling:

            - In a separate bowl, combine the mango puree, whipped cream, powdered sugar, and vanilla extract. Gently fold the mixture until well combined, ensuring you maintain the light and airy texture of the whipped cream.

              Assemble the Cake:

                - Take one crepe and spread a thin layer of the mango filling on top. Place another crepe on top and repeat the process until all crepes are stacked, finishing with a crepe on top.

                  Chill the Cake:

                    - Cover the assembled cake with plastic wrap and refrigerate for at least 2 hours to set. This also enhances the flavors.

                      Serve:

                        - Once chilled, slice the crepe cake into wedges. Garnish with fresh mango slices, mint leaves, and optionally sprinkle with toasted coconut flakes for extra texture. Serve cold!
