1 pound boneless, skinless chicken breasts

4 cups chicken broth

1 cup milk

1/4 cup unsalted butter

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup buttermilk

1 small onion, diced

2-3 carrots, chopped

2-3 celery stalks, chopped

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Chicken: In a large pot, place the chicken breasts and cover them with chicken broth. Bring to a boil, then reduce heat and simmer for about 20-25 minutes or until the chicken is cooked through. Remove the chicken from the pot and shred it when cool enough to handle. Reserve the chicken broth.

    Make the Dumpling Batter: In a mixing bowl, whisk together the flour, baking powder, salt, and black pepper. In a separate bowl, combine the milk and buttermilk. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

      Sauté Vegetables: In the same pot used for the chicken, melt the butter over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

        Combine Ingredients: Once the vegetables are ready, pour back in the reserved chicken broth and add the shredded chicken. Bring the mixture to a gentle boil.

          Add Dumplings: Drop spoonfuls of the dumpling batter onto the boiling broth. Cover the pot and let the dumplings steam for about 15-20 minutes or until they are cooked through and fluffy.
