8 large flour tortillas (10-inch)

8 large eggs

1 cup shredded cheddar cheese

1 cup black beans, drained and rinsed

1 cup diced bell peppers (mixed colors)

1 cup chopped spinach

1 small onion, diced

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

1/4 cup salsa (optional, for serving)

Fresh cilantro, chopped (optional, for garnish)

Instructions
 

Prepare the filling: In a large skillet, heat olive oil over medium heat. Add diced onion and bell peppers, sautéing until softened, about 5 minutes. Stir in the spinach and cook for an additional 2 minutes until wilted.

    Whisk the eggs: In a large bowl, crack the eggs and whisk them together with garlic powder, cumin, paprika, salt, and pepper.

      Cook the eggs: Add the whisked eggs to the skillet with the vegetables. Stir gently and cook until the eggs are fully cooked, about 5-7 minutes. Remove from heat and allow to cool slightly.

        Assemble the burritos: Lay a tortilla flat and spoon a portion of the egg mixture onto the center of the tortilla. Top with black beans and a sprinkle of cheddar cheese.

          Wrap the burritos: Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom. Repeat with remaining tortillas and filling.

            Wrap for freezing: Wrap each burrito tightly in plastic wrap, then place them in a large freezer bag. This will help prevent freezer burn.

              Label and freeze: Label the bag with the date. Store in the freezer for up to 3 months.

                Reheat when needed: To reheat, remove the plastic wrap, wrap the burrito in a paper towel, and microwave on high for 1-2 minutes. For best results, thaw in the refrigerator overnight before reheating.

                  Serve and enjoy: Serve with salsa and fresh cilantro as a garnish if desired.
