Make Ahead Breakfast Casserole

A delightful twist on a classic dish.

Ingredients

8 large eggs

2 cups milk (whole or 2%)

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup cooked and crumbled breakfast sausage (or turkey sausage)

1 cup diced bell peppers (red, green, or a mix)

1 cup diced onion

2 cups frozen hash browns, thawed

2 cups shredded cheddar cheese

Fresh herbs for garnish (optional: chives or parsley)

Instructions

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.

In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until fully combined and slightly frothy.

In the prepared baking dish, spread the thawed hash browns evenly across the bottom.

Layer the cooked crumbled sausage evenly over the hash browns.

Evenly distribute the diced bell peppers and onions on top of the sausage layer.

Pour the egg mixture over the entire dish, ensuring that it seeps through the layers.

Sprinkle the shredded cheddar cheese uniformly across the top.

Cover the baking dish with aluminum foil and refrigerate for at least 2 hours, or overnight for the best flavor integration.

When ready to bake, remove the foil and bake in the preheated oven for 45-55 minutes, or until the casserole is firm in the center and the edges are golden brown.

Let it cool for about 10 minutes before slicing. Garnish with freshly chopped herbs if desired. Serve warm.
