1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk

2 large eggs

1/4 cup unsalted butter, melted

1 cup cooked lobster meat, chopped

1/4 cup green onions, finely sliced

1/4 teaspoon cayenne pepper (optional)

For the Creamy Hollandaise Sauce:

3 large egg yolks

1 tablespoon lemon juice

1/2 cup unsalted butter, melted and still warm

Salt and white pepper to taste

A pinch of cayenne pepper (optional)

Instructions
 

Prepare the Waffle Batter:

    - In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

      - In another bowl, combine the buttermilk, eggs, and melted butter. Mix well.

        - Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

          - Gently fold in the chopped lobster meat, green onions, and cayenne pepper (if using) until evenly distributed.

            Preheat the Waffle Iron:
