LOADED POTATO RANCH CHICKEN CASSEROLE

2 cups cooked, shredded chicken breast

4 large russet potatoes, peeled and diced

1 cup ranch dressing

1 cup shredded cheddar cheese, plus extra for topping

1 cup sour cream

1 cup milk

1 packet (1 oz) ranch seasoning mix

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon black pepper

1/4 cup chopped green onions (for garnish)

1/2 cup crispy bacon bits (optional for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Potatoes: In a large pot, boil the diced potatoes in salted water until they are tender (about 10-12 minutes). Drain and set aside.

      Mix the Base: In a large mixing bowl, combine the shredded chicken, ranch dressing, sour cream, milk, ranch seasoning mix, garlic powder, onion powder, and black pepper. Stir until well mixed.

        Combine Ingredients: Add the cooked potatoes to the chicken mixture, and gently fold them in until all the potatoes are well coated.

          Layer the Casserole: Transfer half of the chicken and potato mixture into a greased 9x13-inch baking dish. Sprinkle half of the cheddar cheese over the mixture. Layer the remaining chicken and potato mixture on top and finish with the remaining cheddar cheese.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.

              Garnish and Serve: Once done, remove the casserole from the oven and let it cool for a few minutes. Top with chopped green onions and crispy bacon bits, if using. Serve warm and enjoy!
