Ingredients
  

2 cups cooked chicken, shredded

4 large russet potatoes, peeled and diced

1 cup ranch dressing

1 cup sour cream

1 cup shredded cheddar cheese

1 cup crispy bacon bits

1 cup frozen corn (optional)

1 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup breadcrumbs (for topping)

2 tablespoons olive oil

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 10-15 minutes, or until fork-tender. Drain and set aside.

      Mix Chicken Mixture: In a large bowl, combine the shredded chicken, ranch dressing, sour cream, half of the cheddar cheese, bacon bits, corn, green onions (reserve some for garnish), garlic powder, onion powder, salt, and pepper. Mix until fully combined.

        Combine with Potatoes: Gently fold the cooked potatoes into the chicken mixture until the potatoes are well coated.

          Transfer to Casserole: Grease a 9x13 inch casserole dish with olive oil. Transfer the loaded potato and chicken mixture into the dish, spreading it evenly.

            Topping: Sprinkle the remaining cheddar cheese and breadcrumbs over the top of the casserole for a crispy finishing touch.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until bubbly and the top is golden brown.

                Serve and Garnish: Remove from the oven and let it cool for a few minutes. Garnish with the reserved green onions before serving.
