Loaded Nachos with Cheese Sauce

1 large bag of tortilla chips

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup cooked and seasoned ground beef or turkey (optional)

1 can (15 oz) black beans, rinsed and drained

1 cup diced tomatoes (fresh or canned)

1 jalapeño, sliced (optional)

1 cup guacamole

1 cup sour cream

1/4 cup chopped fresh cilantro

1/2 cup sliced green onions

1/2 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper, to taste

Prepare the Cheese Sauce: In a saucepan over medium heat, combine the shredded cheddar cheese and Monterey Jack cheese with 1 cup of milk. Stir continuously until the cheese melts completely and becomes smooth. If the mixture is too thick, add more milk until desired consistency is achieved. Season with chili powder, cumin, garlic powder, salt, and pepper to taste. Remove from heat.

    Preheat the Oven: Preheat your oven to 350°F (175°C).

      Layer the Nachos: On a large baking sheet or oven-safe dish, spread a generous layer of tortilla chips. Evenly sprinkle the cooked ground beef (if using), black beans, diced tomatoes, and jalapeño slices over the chips.

        Top with Cheese Sauce: Pour half of the cheese sauce evenly over the chips and toppings. Add another layer of chips and repeat the process, finishing with the remaining cheese sauce on top.
