Ingredients

2 pounds russet potatoes, cut into fries

2 tablespoons vegetable oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

1 cup chili (homemade or canned)

2 cups shredded cheddar cheese

1 cup sour cream

½ cup green onions, chopped

¼ cup jalapeños, sliced (optional)

½ cup black olives, sliced (optional)

Fresh cilantro, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C).

Prepare the Fries: In a large bowl, toss the cut russet potatoes with vegetable oil, salt, black pepper, garlic powder, and paprika until well coated.

Bake the Fries: Spread the fries in a single layer on a large baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

Heat the Chili: While the fries are baking, warm your chili in a saucepan over medium heat. If using canned chili, you can also add spices or seasonings to enhance the flavor.

Assemble the Dish: Once the fries are done, remove them from the oven and layer the fries on a large serving platter. Pour the warm chili over the fries, then sprinkle the shredded cheddar cheese generously on top.

Melt the Cheese: Return the loaded fries to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven and drizzle with sour cream. Top with green onions, jalapeños, black olives, and fresh cilantro, if desired. Serve immediately and enjoy the ooey-gooey goodness!
