1 large head of cauliflower, cut into florets

4 slices of bacon, cooked until crispy and chopped

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup cream cheese, softened

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup panko breadcrumbs

2 tablespoons melted butter

Extra cheddar cheese for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

    Prepare the Cauliflower: In a large pot, bring water to a boil and add a generous pinch of salt. Add the cauliflower florets and cook for about 5-7 minutes, or until tender. Drain and allow it to cool slightly.

      Mash the Cauliflower: In a large mixing bowl, mash the cooked cauliflower using a potato masher or fork, leaving some small chunks for texture.

        Mix the Ingredients: To the mashed cauliflower, add the cooked bacon, shredded cheddar cheese, sour cream, cream cheese, green onions, garlic powder, onion powder, smoked paprika, and season with salt and pepper. Mix well until all the ingredients are combined.

          Transfer to Baking Dish: Pour the cauliflower mixture into the prepared baking dish and spread it out evenly.

            Prepare the Topping: In a small bowl, mix the panko breadcrumbs with the melted butter. If desired, add additional shredded cheddar cheese into this mixture for extra cheesiness.

              Top and Bake: Sprinkle the breadcrumb mixture evenly over the cauliflower mixture in the baking dish. If using, sprinkle extra cheddar cheese on top.
