4 large russet potatoes, peeled and diced

1 cup sour cream

1 cup shredded cheddar cheese

1 cup cooked and crumbled bacon

1/2 cup green onions, chopped (plus extra for garnish)

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup mozzarella cheese, shredded

1/4 cup butter, melted

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Boil the Potatoes: In a large pot, bring salted water to a boil and add the diced potatoes. Cook until tender (about 15-20 minutes). Drain and allow to cool slightly.

      Make the Casserole Mixture: In a large mixing bowl, combine the cooked potatoes, sour cream, milk, melted butter, garlic powder, onion powder, salt, and black pepper. Gently mash the potatoes with a fork or potato masher, leaving some chunks for texture.

        Add the Goodies: Fold in the crumbled bacon, half of the cheddar cheese, and the chopped green onions until evenly mixed.

          Transfer the Mixture: Pour the potato mixture into a greased 9x13-inch baking dish, spreading it evenly.

            Add Toppings: Sprinkle the remaining cheddar cheese and the mozzarella cheese evenly over the top of the casserole.

              Bake: Place in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.
