3 large russet potatoes

4 slices of thick-cut bacon

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup sliced green onions (scallions)

1/4 cup jalapeños, sliced (optional)

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Wash and peel (if desired) the russet potatoes. Cut them into thick fries. Rinse them in cold water to remove excess starch and pat dry with paper towels.

      Season the Fries: In a large bowl, toss the fries with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.

        Bake the Fries: Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for 30-35 minutes, flipping halfway through, until golden and crispy.

          Cook the Bacon: While the fries are baking, fry the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels, then chop into small pieces.

            Assemble the Loaded Fries: Once the fries are cooked, remove them from the oven and sprinkle the shredded cheddar cheese generously over the top. Add the chopped bacon and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbling.
