1 cup ricotta cheese

1 cup granulated sugar

1/2 cup Limoncello liqueur

3 large eggs

2 cups all-purpose flour

2 tsp baking powder

1/2 tsp salt

Zest of 2 lemons

1/4 cup lemon juice (freshly squeezed)

1/2 cup unsalted butter, softened

Powdered sugar for dusting

Lemon slices and mint leaves for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    In a large mixing bowl, combine the ricotta cheese, granulated sugar, and softened butter. Beat until creamy and smooth.

      Add the eggs one at a time, mixing well after each addition. Then, add Limoncello, lemon juice, and lemon zest. Mix until fully combined.

        In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined—do not overmix.

          Pour the batter into the prepared cake pan and spread it evenly. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

            Once baked, allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

              Once cool, dust the top with powdered sugar, and garnish with lemon slices and fresh mint leaves, if desired.
