Lemony Chicken à la King

Ingredients
  

2 cups cooked chicken, diced

1 cup bell peppers (red and yellow), diced

1 cup mushrooms, sliced

1 cup frozen peas

1 medium onion, finely chopped

3 tablespoons butter

3 tablespoons all-purpose flour

2 cups chicken broth

1 cup heavy cream

1 tablespoon lemon zest

2 tablespoons fresh lemon juice

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Toasted bread or puff pastry (for serving)

Instructions
 

Sauté Vegetables: In a large skillet over medium heat, melt the butter. Add the chopped onion, bell peppers, and sliced mushrooms. Sauté until the onions are translucent and the mushrooms are tender, about 5-7 minutes.

    Make the Roux: Sprinkle the flour over the sautéed vegetables and stir well to coat. Cook for another 2 minutes to eliminate the raw flour taste.

      Add Chicken Broth: Gradually pour in the chicken broth while constantly stirring the mixture. Bring to a gentle simmer until it thickens, around 3-5 minutes.

        Stir in Cream: Lower the heat and slowly add the heavy cream, stirring until well combined and creamy.

          Flavor the Dish: Add the cooked chicken, frozen peas, lemon zest, lemon juice, garlic powder, dried thyme, salt, and pepper. Stir gently to combine and heat through for about 5 minutes.

            Serve: Serve the Lemony Chicken à la King over toasted bread or spoon into puff pastry. Sprinkle chopped fresh parsley on top for a refreshing finish.
