Lemon Sugar Cookies

A delightful twist on a classic dish.

Ingredients
  

1 cup unsalted butter, softened

1 ½ cups granulated sugar

Zest of 2 lemons

1 large egg

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1/4 cup powdered sugar (for dusting)

Optional: 1 tablespoon lemon juice (for extra tang)

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

      Add the lemon zest, egg, and vanilla extract to the butter-sugar mixture, and mix until well combined.

        In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, incorporate the lemon juice for an extra burst of flavor.

            Chill the dough in the refrigerator for about 30 minutes for easier handling.

              Once chilled, scoop tablespoon-sized balls of dough and roll them into smooth balls. Place them spaced about 2 inches apart on the prepared baking sheet.

                Gently flatten each ball with the bottom of a glass or your hand. You can also sprinkle a bit of granulated sugar on top for added sweetness and crunch.

                  Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers might look a bit soft, but they will firm up as they cool.

                    Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

                      Once cooled, dust with powdered sugar before serving, if desired.
