1 cup long-grain white rice

2 cups vegetable or chicken broth

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

Rinse and Drain the Rice: Begin by rinsing the long-grain white rice under cold water until the water runs clear. Drain well and set aside.

    Sauté Aromatics: In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until the onion is translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Toast the Rice: Add the rinsed rice to the saucepan and stir well to coat the rice grains with the oil, onions, and garlic. Toast the rice for about 2-3 minutes until slightly golden, stirring occasionally.

        Add Broth and Flavorings: Pour in the vegetable or chicken broth, lemon zest, lemon juice, oregano, thyme, salt, and pepper. Stir to combine all ingredients.

          Cook the Rice: Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan with a tight-fitting lid and let it simmer gently for 15-20 minutes or until the rice is tender and all the liquid has been absorbed.

            Fluff and Add Herbs: Once cooked, remove the saucepan from heat. Let it sit, covered, for 5 minutes. Then, remove the lid and fluff the rice with a fork. Gently fold in the chopped parsley and basil. Adjust seasoning with more salt or lemon juice as desired.

              Serve: Spoon the lemon herb rice onto plates or into a serving dish. For an elegant touch, garnish with lemon slices and extra herbs if desired.
