1 whole chicken (3-4 lbs)

1/2 cup unsalted butter, softened

2 lemons (1 juiced, 1 cut into wedges)

6 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

1 onion, quartered

1 cup chicken broth

Fresh herbs for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Herb Butter: In a mixing bowl, combine the softened butter, the juice of 1 lemon, minced garlic, chopped rosemary, thyme, parsley, salt, and pepper. Mix until well combined.

      Prepare the Chicken: Pat the chicken dry with paper towels, inside and out. This helps to achieve a crisp skin. Season the cavity generously with salt and pepper.

        Apply the Herb Butter: Gently loosen the skin of the chicken by inserting your fingers between the skin and the meat. Take about half of the herb butter mixture and spread it evenly under the skin, using your fingers to ensure an even distribution. Rub the remaining butter all over the outside of the chicken. Don't forget to season the outside generously with salt and pepper as well.

          Stuff the Chicken: Insert lemon wedges and quartered onion into the cavity of the chicken. This will add flavor as it roasts.

            Roast the Chicken: Place the chicken breast side up in a roasting pan. Pour chicken broth around the chicken in the pan. This will keep the chicken moist and create a flavorful base for gravy.

              Bake: Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) when measured at the thickest part of the thigh. Baste the chicken with the pan juices half-way through cooking for extra moisture and flavor.

                Rest the Chicken: Once done, remove the roasting pan from the oven and let the chicken rest for about 10-15 minutes before carving. This allows the juices to redistribute throughout the meat.

                  Serve: Carve the chicken and serve it with the pan juices. Garnish with fresh herbs if desired. Pair it with roasted vegetables or a fresh salad for a complete meal.
